  • 3 medium waxy potatoes, peeled and diced (about 2 cups)
  • 2 medium carrots, diced (about 1 cup)
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or milk)

Instructions

  1. In a large pot over medium heat, sauté the diced onion until translucent, about 5 minutes.
  2. Add the diced potatoes and carrots; cook for an additional 5 minutes.
