Description

Creamy Mushroom and Asparagus Chicken Penne is a luscious, comforting dish that combines tender chicken, vibrant asparagus, and earthy mushrooms in a rich cream sauce. Perfect for any weeknight dinner.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
  • 8 oz penne pasta
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients: chop chicken, slice mushrooms and asparagus.
  2. Cook penne in salted boiling water until al dente (10-12 minutes). Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown (5-7 minutes).
  4. Add garlic, mushrooms, and asparagus to the skillet; sauté until vegetables are tender.
  5. Pour in heavy cream and stir in Parmesan cheese until melted.
  6. Toss cooked penne with the creamy mixture until evenly coated.
