- 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
- 8 oz penne pasta
- 8 oz fresh cremini or button mushrooms, sliced
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare all ingredients: chop chicken, slice mushrooms and asparagus.
- Cook penne in salted boiling water until al dente (10-12 minutes). Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown (5-7 minutes).
- Add garlic, mushrooms, and asparagus to the skillet; sauté until vegetables are tender.
- Pour in heavy cream and stir in Parmesan cheese until melted.
- Toss cooked penne with the creamy mixture until evenly coated.
