  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 4 oz pancetta or bacon, diced
  • 12 oz spaghetti or fettuccine
  • 2 large fresh eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves fresh garlic, minced
  • Freshly cracked black pepper, to taste
  • Salt, to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and reserve some pasta water.
  2. In a skillet over medium heat, sauté the pancetta until crispy (5-7 minutes). Add diced chicken and cook until no longer pink (6-8 minutes).
  3. In a bowl, whisk together eggs and Parmesan until smooth.
  4. Add the drained pasta to the skillet with chicken and pancetta over low heat. Quickly pour in the egg mixture while tossing to combine without scrambling.
  5. Gradually add reserved pasta water until you reach desired creaminess. Season with pepper and additional Parmesan before serving.
