- 12 oz spaghetti or fettuccine
- 2 large fresh eggs
- 1 cup grated Parmesan cheese

- Salt, to taste
Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and reserve some pasta water.
- In a skillet over medium heat, sauté the pancetta until crispy (5-7 minutes). Add diced chicken and cook until no longer pink (6-8 minutes).
- In a bowl, whisk together eggs and Parmesan until smooth.
- Add the drained pasta to the skillet with chicken and pancetta over low heat. Quickly pour in the egg mixture while tossing to combine without scrambling.
- Gradually add reserved pasta water until you reach desired creaminess. Season with pepper and additional Parmesan before serving.
