- 1 lb ground beef (80% lean)
- 8 oz large pasta shells
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 8 oz cream cheese
- 1 cup shredded sharp cheddar cheese
- Salt, pepper, paprika, and Italian seasoning to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pan over medium heat. Sauté chopped onions until translucent. Add minced garlic and cook for 1 minute.
- Add ground beef and break it apart with a spatula. Brown for about 6-8 minutes.
- In a separate pot, boil salted water and cook pasta shells according to package instructions until al dente (10-12 minutes). Drain, reserving ½ cup pasta water.
- Stir beef broth and cream cheese into the meat mixture until smooth.
- Mix in shredded cheddar cheese until melted. If needed, thin sauce with reserved pasta water.
- Fold cooked pasta shells into the sauce until well-coated. Garnish with fresh parsley before serving.
