Ingredients

  • 1 cup orzo pasta
  • 1 can (15 oz) creamed corn
  • 2 (6 oz) fresh salmon fillets
  • 2 tbsp butter (or olive oil)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil salted water in a large pot. Cook orzo until al dente, about 8 minutes. Drain and set aside.
  2. In a skillet over medium heat, melt butter. Add garlic and sauté until fragrant.
  3. Stir in creamed corn and cooked orzo until well combined.
  4. Season salmon fillets with salt and pepper. In another skillet, heat oil over medium-high heat. Cook salmon skin-side down for about 5 minutes, then flip to cook through.
  5. Stir Parmesan into the orzo mixture and fold in parsley before serving.
  6. Plate the creamy mixture and top with salmon. Garnish with extra parsley if desired.
