  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes (halved)
  • 1 medium zucchini (sliced)
  • 1 medium red onion (diced)
  • 4 cloves fresh garlic (minced)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • ½ cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Cook orzo according to package instructions until al dente, about 8 minutes. Drain and drizzle with olive oil to prevent sticking.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté seasoned chicken breasts for 6-8 minutes until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and diced red onion; sauté for about 3 minutes until fragrant.
  4. Add sliced zucchini and cherry tomatoes; cook for another 5 minutes until tender.
  5. Stir in lemon juice and oregano, then gently combine the cooked orzo with the chicken mixture.
  6. Fold in crumbled feta cheese before serving.
