  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 lbs russet potatoes
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 4 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook chicken in a skillet over medium heat for 6-8 minutes per side until golden brown. Let cool, then shred.
  3. Peel and chop potatoes; boil in salted water until fork-tender (15-20 minutes). Drain.
  4. Mash potatoes with butter, heavy cream, sour cream, garlic powder, salt, and pepper until creamy yet slightly chunky.
  5. In a greased baking dish, layer half of the mashed potatoes, followed by half of the chicken and half of the cheese. Repeat layers.
  6. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden brown.
