- 2 tbsp lime juice, freshly squeezed
- 8 corn or flour tortillas
- 1 cup fresh pineapple, diced
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, finely chopped
- 1 avocado, sliced
- Salt and pepper to taste
Instructions
- In a bowl, mix chipotle peppers, honey, lime juice, salt, and pepper to create the marinade.
- Marinate the salmon fillets for at least 20 minutes.
- Heat olive oil in a nonstick skillet over medium-high heat. Sear the marinated salmon skin-side down for 4-5 minutes per side until golden brown and cooked through.
- In another bowl, combine diced pineapple, cilantro, red onion, lime juice, salt, and pepper to make the pineapple salsa.
- Warm the tortillas in a skillet for about 30 seconds on each side until pliable.
- Flake the salmon into pieces on each tortilla and top generously with pineapple salsa. Add sliced avocado if desired.
