Description

Cheesy Mashed Potato Puffs are crispy bites filled with creamy cheese, perfect for parties or as a cozy snack.


Ingredients

  • 2 cups mashed potatoes (smooth)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 large eggs (room temperature)
  • 1 cup fresh breadcrumbs
  • 1/4 cup chopped green onions (or chives)
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine mashed potatoes, cheddar cheese, mozzarella cheese, eggs, breadcrumbs, green onions, salt, and pepper. Mix until well blended.
  3. Scoop small portions onto a parchment-lined baking sheet, spacing them about two inches apart.
  4. Roll each portion into a ball and coat in additional breadcrumbs.
  5. Heat oil in a deep skillet over medium heat until shimmering. Fry the puffs in batches until golden brown on all sides, about 4-5 minutes.
  6. Drain on paper towels and serve warm.
