- 2 cups mashed potatoes (smooth)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 large eggs (room temperature)
- 1 cup fresh breadcrumbs
- 1/4 cup chopped green onions (or chives)
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine mashed potatoes, cheddar cheese, mozzarella cheese, eggs, breadcrumbs, green onions, salt, and pepper. Mix until well blended.
- Scoop small portions onto a parchment-lined baking sheet, spacing them about two inches apart.
- Roll each portion into a ball and coat in additional breadcrumbs.
- Heat oil in a deep skillet over medium heat until shimmering. Fry the puffs in batches until golden brown on all sides, about 4-5 minutes.
- Drain on paper towels and serve warm.
